Italy’s most Michelin-starred chef Enrico Bartolini and pastry star Tommaso Foglia, 24 of the best restaurateurs from the provinces of Pistoia and Prato, tastings, cooking shows, workshops and music. These are the ingredients of the eighth edition of “La Toscana in Bocca“, returning to the Cattedrale ex Breda in Pistoia from April 24 to 27.
The details of the event – organised by Confcommercio Pistoia e Prato and the Pistoia City Tourism Consortium – were presented today in the Cutuli Room of the Region of Tuscany, in the presence of the Regional Councillor for Economy and Tourism Leonardo Marras, the Director of Confcommercio Pistoia e Prato Tiziano Tempestini, Paolo Mati (Working Group of La Toscana in Bocca), and the Mayor of Pistoia, Alessandro Tomasi.
The event is part of the Vetrina Toscana network – promoted under the slogan #unviaggionelviaggio – the Region’s food and wine tourism project aimed at enhancing quality dining through a network that gives strong visibility to the many types of businesses involved.
The tagline for this year’s edition is “Every bite is a journey” – a slogan that perfectly captures the spirit of the four-day event: a delicious journey through a cuisine that remains true to Tuscan tradition, while enthusiastically embracing innovation.

The typical products and dishes of Tuscan cuisine – offering a balance between tradition and experimentation – will be the real stars of the event. Last year, around 20,000 dishes were served a sign of the strong public enthusiasm for La Toscana in Bocca. Restaurants, gourmet pizzerias, pastry shops and cocktail bars will come together at the Cattedrale to once again amaze visitors, in line with this year’s tagline: “Every bite is a journey”. There will be plenty of delights for the palate: from fried pizza with Peposo and Pecorino from the Pistoia mountains, to Ribollita “in three variations”; from Tortelli filled with burrata and mortadella di Prato to Pici all’Amatriciana made with Cinta Senese pork – all paired with local wines and liqueurs. Then come the desserts: Pesche di Prato, cakes, ice creams, and much more. A huge showcase for the area and its culinary treasures.
The participating establishments include: Rosso Veneziano, Enoteca La Bussola da Gino, Frisco Burger Bar, Gelateria Bar Nazionale Agliana, Il Garganello by Gargantuà Osteria, Il Taba Dolce di Latte, La Bodega, La Bussola da Gino, La Degna Tana, La Fenice Pizzeria Contemporanea, Macellai Federcarni, Pasticceria Nuovo Mondo, Quore Pop Osteria Contemporanea, Ristorante Il Capriolo, Toscana Fair, Villa Zelma, Voronoi, Ultimo Ristorante, La Locanda del Capitano, Trattoria da Burde, Luca Borgioli The Lab, I Vivai, Poke Chiacchere, and Agriturismo A Casa Nostra.

The ribbon-cutting ceremony is scheduled for Thursday April 24 at 6 p.m., in the presence of the organizers and local institutions, followed at 9.30 p.m. by a live performance from L’Orchestraccia.
Alongside the main focus of the event – the many tastings – there will be a variety of additional activities: workshops, cooking shows, talks, book presentations, and live music.
On Friday April 25, the restaurateurs will take centre stage even more, thanks to a cooking show and a culinary contest in which they will participate. The workshops for young chefs will continue, and guests will also be able to watch a live knife-cut meat demonstration by the butchers of the Macellai Federcarni Federation. At 9.30 p.m., Skiffles will take to the stage.
On Saturday April 26, the event will welcome its first major guest. La Toscana in Bocca will host Italy’s most Michelin-starred chef, Enrico Bartolini, who will be interviewed on stage at 7 p.m. Today, nine Italian restaurants bear his distinctive signature, which combines innovation, simplicity, a pursuit of quality, and balance in the kitchen. Throughout the day, there will be more workshops for children, guided tastings of Tuscan food and wine specialities, another cooking show by the restaurateurs, and a captivating Mystery Box challenge. At 10 p.m., the DJ set by Pippo DJ will celebrate the night.

Sunday April 27 will feature pastry chef Tommaso Foglia, already known as a judge on Bake Off Italia and Cake Star, and a multi-award-winning figure whose recipes have travelled the world. Foglia will be interviewed on stage starting at 6.30 p.m. During the day, there will be more cooking workshops for children, cooking shows, guided tastings, and the arrival of magician Francesco Micheloni. At 4.30 p.m., Cristina Manetti will take the stage to present her book “A Penelope che prende la valigia”, a kind of open letter to the women of tomorrow. Manetti, Chief of Staff of the Region of Tuscany, is also the creator and promoter of “La Toscana delle Donne”, the regional project against gender discrimination. The final day will end with music by Paola Guadagno.
