On Sunday 5 October at 11:00 a.m. at Caffè de La Versiliana (Viale Morin 16, Marina di Pietrasanta), the meeting “The sustainable lightness of … food: Vetrina Toscana brings us stories from the table through tradition, sharing, and sustainability.”

Sustainability is one of the cornerstones of Vetrina Toscana, the food and wine tourism project through which the Region of Tuscany promotes the agri-food and tourism sectors. This approach embraces local produce, organic farming, short supply chains, seasonality, respect for the identity of the territory, circular cooking and plastic-free practices, a modern approach deeply rooted in ancient history and tradition.

We will share a conversation about the project and some “good practices”, followed by a tasting of local dishes and products curated by Vetrina Toscana in collaboration with the Regional Union of Tuscan Chefs.

The meeting will begin with a welcome speech from the Director of Toscana Promozione Turistica, who will present some of the new features of the project, its values manifesto and the agreements finalised in recent years.

Pier Paolo Lorieri, President of the Federation of Wine, Oil and Flavour Routes of Tuscany, will explain how food and wine tourism plays a vital role in achieving economic sustainability in rural and mountain areas, and in countering their depopulation. These areas are essential for safeguarding the environment and protecting it.

Eugenio Leone of the Food Bank of Tuscany will focus on the issue of food sustainability from the perspective of social support and the fight against waste, illustrating the activities carried out by the non-profit organisation that collects food surpluses from agriculture and industry and redistributes them free of charge to over 500 local charitable bodies.

Cuisine is not just about food, but also about conviviality, sharing and community. Lucio Scognamiglio of the “Tecum Cucina di Quartiere” restaurant in Florence recounts a “social” experiment that has been running since 2022: a structured calendar of free events held regularly at the restaurant. The initiative, called ‘Genius Loci’, will include meetings with experts, philosophers, performers and artists, who encourage participants to explore their own ‘places’ with the curiosity and ease of friends meeting for a chat in a living room.

Roberto Lodovichi, President of the Regional Union of Tuscan Chefs, will describe traditional dishes and recipes inspired by the theme of circular cooking, which will then be tasted at the end of the meeting, including meatballs, traditional specialities such as “francesina” and “donzelle”, as well as “zuppa inglese” trifle. The meeting will be moderated by Daniela Mugnai, from the press office of Vetrina Toscana.

The institution of Vetrina Toscana promotes food and wine tourism from a sustainability perspective, in the various meanings of the term: environmental, in the respect, care, and protection of the territory; social, so that it may help safeguard the customs of the community visited; economic, by generating employment and income for local residents; and cultural, by allowing an understanding of how a product is created and the story behind it.

The event is part of the initiatives of Toscana Promozione Turistica and is organised by Vetrina Toscana, the project of the Region, in collaboration with Unioncamere Toscana, which promotes food and wine tourism, under the direction of Toscana Promozione Turistica, assisted by Fondazione Sistema Toscana.

The meeting at the Caffè de La Versiliana is promoted and organised by Fondazione Versiliana in collaboration with the Municipality of Pietrasanta and with the support of the Region of Tuscany and Toscana Promozione Turistica.
