Tozzetti are small rectangular or stick-shaped biscuits, curved at the sides and a golden brown colour. They are very tasty with a strong flavour of hazelnuts and candied fruits.

6. Production process:
Wheat flour, eggs, hazelnuts, candied fruit, sugar and sourdough starter are mixed. The dough is then shaped into a long cord on a floured pastry board. The cord is placed on a tray and baked for 20 minutes at around 180°C. Once baked, it’s left to cool and cut into small sticks that are baked once more for 10 minutes.

Tozzetti di Pitigliano get their name from the unique stocky shape they take after the dough cord is cut.

There are 4 bakeries in Pitigliano that prepare tozzetto, one of which is the most famous. Production is constant throughout the year and around 2-3 tonnes. Tozzeto is sold exclusively direct.
