6. Production process:
The rice is par boiled in salted water. It’s mixed with the remaining ingredients: egg, milk, Parmesan cheese, salt, pepper, nutmeg, butter and breadcrumbs, and baked in a 30cm pie tin for around 30 minutes at 200°C.

It’s mainly made for festivals and feasts, but can be bought from local bakeries all year round.

Production is estimated to be around 40-50 tonnes with peaks during the Easter period. Sales are primarily made directly in store and to local customers. Only a small portion is sold in the rest of the region.
