\nFemminelle di Burano are lagoon crabs used to prepare some traditional local dishes. They belong to the genus of the Portunidae, especially Carcinus (mediterraneus), are heart-shaped, olive green, and very common on all sandy bottoms up to 20 meters deep and on sandy beaches.<\/p>\n

\nThe traditional character of this product is tied to its local origins and use in a number of traditional recipes (femminelle caviar, minestra, soup and risotto di femminelle).<\/p>\n

\nFemminelle, together with other fish products from the Orbetello Lagoon, is made by one cooperative. They are fished from November to January for a quantity of about 10 tonnes a year. They are sold direct and used by restaurateurs. There is no real market for them as they are not prized products. They are available in the cooperative\u2019s shop.
