\nTopi are half-moon or semi-circle-shaped sweets with a golden colour and dimensions of 4-5cm. Their organoleptic characteristics are similar to a traditional crisp, but they differ in their softer texture. <\/p>\n

\nThis sweet is prepared in two stages. First the filling is prepared. Chopped nuts are added to an equal amount of honey. This is mixed with flavourings like cinnamon and orange zest and cooked in a saucepan over moderate heat for around 40 minutes or until the mixture tastes and smells like croccante (an Italian brittle). In the second preparation stage, the pastry is made by mixing flour, egg, oil, mint rosolio liquor, sugar and leavening agents. Once mixed, the dough is shaped into circles with a diameter of 3-4cm. Before the filling cools, it\u2019s shaped into stretched balls and placed on the pastry. The pastry is closed around it and it\u2019s baked for 15 minutes. <\/p>\n

\nTopi di Castell’Azzara are traditional festival confections in the lower Maremma area. Their uniqueness comes from the use of croccante or brittle at the heart of a pastry. <\/p>\n
9. Production:
\nTopi, like taglioli and ciaramito, are made by one pastry shop in Castell\u2019Azzara. In rest of the province, they\u2019re only made for personal consumption. It\u2019s impossible to estimate the quantity in that production is focused in the Christmas period and mainly upon request. Castell\u2019Azzara is experiencing a faze of depopulation, so each year, requests for the product decrease. That said, the tradition is still alive in the home and for personal consumption. The product is exclusively sold direct.
