\nThe flour, eggs, fat (oil or lard), sugar and yeast are kneaded together in a bowl. The dough is left to rise on damp cotton cloths. The little cakes are shaped by hand on a wooden board and baked in a wood-fired oven. Once cooled, a hole is made in the upper section (with a finger) and filled with mint or citrus syrup. <\/p>\n

Mangia e bei owe their traditional character to their unique production method, which uses wooden boards and damp cotton cloths during leavening, and a wood-fired oven for baking. Their particularity also stems from the combination of ingredients, which also explains their name: the cakes are filled with mint or citrus syrup, so you can \u201ceat\u201d (mangia) and \u201cdrink\u201d (bere) at the same time. The flour, eggs, oil and lard are all locally sourced ingredients. They were once made to celebrate the Prato Fair, 8-11 September, when it was tradition to buy these round cakes from the \u201cchiccai\u201d as a \u201cpeccato di gola\u201d (gluttony) that even the most pious of people were permitted to enjoy on feast days. The use of mint or citrus syrup in the sweet has disappeared, at least in Prato. Mangia e bei date back at least 150 years.<\/p>\n
