Production process:<br \/>\nThe trout is raised in 2.5-3m-deep tanks dug into the earth or gravel to recreate the fish\u2019s natural environment and filled with clear, unpolluted and high quality spring water. The tanks are fitted with an oxygenation system and maintain a constant water temperature of 16\u00b0C, allowing the fish to feed all year round and have a more intensive production cycle (9 months) than normal (18 months). The high ratio of water quality to fish ensures good health and high organoleptic qualities, qualifying the project as semi-extensive farming.<br \/>\nPelleted food is used for feeding. The trout are slaughtered when they reach 9 months and weigh around 300g (an adult-sized trout). After being stunned, the fish are taken for gutting, washing and selection. Fish destined for sale as fillets are filleted. The last step is packaging. Sales are made throughout the entire year.<\/p>\n<p>7. Production:<br \/>\nProduction involves two farms in the province of Massa Carrara and one in Lucca. Entire production is around 4,000 tonnes, which analysing commercial trends in recent year, can be considered constant.
