The juicy and generous Florentine steak is a must, as well as the perfectly cooked fillet steak and excellent ribollita vegetable stew \u2013 the recipe for which has been handed down three generations.<br \/>\n\u00a0<br \/>\nThe menu changes every two months and depends on the seasonal produce available. Local produce and niche producers are given plenty of space. Fresh fish is bought daily, again depending on what is available.<br \/>\n\u00a0<br \/>\nThe menu is 100% local and there&#8217;s a tasting menu made up of traditional Tuscan dishes. As well as traditional recipes, we also serve our own creative dishes which are the result of our search for interesting flavour combinations and fresh seasonal ingredients. The wine list offers mostly regional wines, including some biodynamic and organic labels. The menu also always features some vegetarian dishes and meals for those who are gluten-intolerant.<br \/>\n\u00a0<br \/>\nIl Paiolo is also featured in the \u201cLa via artusiana\u201d guide produced by Casa Artusi and Leonardo Romanelli.
